 Well Hello there Friends!! I hope all is well with you and your Families! Can you believe we are in the middle of September, already!?! This year seems to be flying by. Crazy to think that in a few short weeks I will be decorating for Diwali and Christmas!! Pure Craziness.

 Talking about time flying by, a few days back I was listening to YouTube Music with my little ones (this is one of our favorite things to do, we literally do it every single day) and the song "5 More Minutes" by Scotty McCreery came on and it made me stop and listen to the actual words. I was standing in the kitchen listening to the song and it brought a wave of emotion over me. The song talks about Time flying by and wishing you had more of the good stuff, if you haven't heard the song, you really NEED to hear it!! Its Amazing!!

 OK, so back to the point of the song, we spend so much time wishing our days away and worrying about the small things that don't really matter and before you know it the kids are grown up and the days keep passing us by. So take the time with your kids and enjoy those precious few moments because time will fly by! Call your parents or grandparents, make amends with that person who may have done you wrong. Enjoy your life because why else would you want to live?!?!?

 Now on to the recipe at hand, this is perfect for a busy weeknight dinner, super easy to put together (you also can make it ahead) and its delicious, which is a plus!! We keep this recipe on a bi-weekly rotation because everyone in the fam bam loves it!! Oh, yeah another plus is its Vegetarian!!! Score!

 I found this recipe on Pinterest and did a few tweaks to it and made it my own!! Its a Black Bean Enchilada Bake, black beans, quinoa, bell peppers, onion, corn with an enchilada sauce covered in cheese...…..ummmmm YES Please!!!


First step is to sautee onion, bell peppers and garlic until soft, next add cumin & coriander and a can of black beans, cook for about 5 mins (just to soften the beans) add corn, cooked quinoa and enchilada sauce to the pot.










Last few steps: Pour everything into a baking dish, top with cheese (I use Colby/Monterey jack) top with black olives and green onion and throw in the oven until cheese is melted. It usually takes about 20ish minutes. Quick, easy and super delicious!!

Ingredient List:
1 can of black beans
1 cup of cooked quinoa
2 bell peppers diced (any color
1 onion diced
2 cloves of garlic
1/2 cup of corn
1 can of enchilada sauce
cheese 
black olives
green onion

Spices:
2 tsp cumin
1 tsp coriander
salt to taste
