Spicy Chicken




 Hi Friends, Happy Monday!! Can you believe that August is already halfway over? Hubby and I was talking last night about how this year is flying by! Our oldest started 2nd grade and our youngest just turned 2 last week!! I love the saying "Time Flies When Your Having Fun"!

 I wanted to share with you all, one of my husbands favorite Chicken dishes, its seriously on my bi-weekly meal rotation. I love those recipes that you never get tired of making. Now I will warn you this is a Spicy Chicken Dish, not for the faint of heart, but its absolutely delicious!

 First step is to marinate your chicken, I usually marinate for minimum 3 hours but usually first thing in the morning or you can even do it the night before. Your chicken marinade is chicken cubed, yogurt, 1 garlic clove, 1 inch of ginger, turmeric, garam masala and salt.


Next step is to cut your onion, garlic and ginger into small pieces (you could use a blender to make it quicker). Then grind your spice blend (coconut, cloves, cinnamon, black pepper balls, cardamom and red chilies) I use a coffee grinder for this!!

Now its time for cooking, add oil to pan and saute onion paste (just a few mins until soft) then add your chicken, you will need HIGH heat for 5 mins (flipping over both sides to get a sear). After 5 mins add your tomato puree, turn your heat to Med - cover with lid and cook 10 minutes.






 After cooking for 10 mins, add your garam masala, cumin, your spice blend, lasoon masala & coriander, add about 1/2 cup of water to pan and cook 5-10 mins until chicken is cooked.

 Finally add mint & cilantro and its done, right before serving add 1 spoon of ghee to take it over the top!!!







Here is what you will need:
1lb Chicken (I use tenders)
large onion
yogurt 4 spoons
garlic 2 cloves
ginger 2 inches
handful mint/cilantro
3 spoon tomato puree

Spices:
turmeric 1tsp
garam masala 2 tsp
dry coconut 2 tsp
3 cloves
1/2 spoon cinnamon
4 black pepper balls
2 cardamom
2-3 red dry chilies
lasoon masala (optional)
cumin (pinch
coriander 1tsp

  2. Yes, it may be called onion/garlic masala too. Its usually on the spice aisle. =)
