Catching Up!


 Hello, yes its me!! I'm still here!! I have so much to catch you guys up on!! We made a huge move to Michigan, no longer in the sunshine state. We really miss all our Friends in Florida, but we are settling down nicely in our small town and finding our place here. 



 We absolutely loved our summer in Michigan, the weather was Amazing!!  My in-laws came and spent the summer here with us, we had a Wonderful summer, we spent some time exploring our little town, we went on a few days trips around Michigan and thoroughly enjoyed our Summer! 

 Now on to the recipe I want to share!! My mother-in-law made this for us and we absolutely loved it! I have made it numerous times since they left and I swear every time I make it, I love it even more! Its a fire roasted eggplant with some spices, served with chapati = Amazing!!




Here is what you will need:

Eggplant
onion
green onion
cilantro
tomato puree 1/2 cup
green chili (optional)

Spices:
mustard seed (1/2 spoon)
asafoetida (1/2 spoon)
turmeric (1/2 spoon)
cumin (1/2 spoon)
coriander (1/2 spoon)






Step 1 - Roast your eggplant over an open flame (poke a few holes around the eggplant and rub some oil over the eggplant). I roasted mine until it was soft and falling apart. Once its roasted, let it cool down. Next you need to peel the skin and take out the seeds and smash the eggplant.

Step 2 - Chop Onion- you want equal amount of onion to Eggplant. You also need a big handful of cilantro and green onion chopped.

Step 3 - Now on to the cooking - add oil to your pan (let it get hot) add mustard seed & asafoetida (let it cook for a min) add green chili and chopped onion - cool for a few mins until soft - next add tomato puree and let it cook for 2-3 mins. Add turmeric/cumin/coriander/salt stir and add the Eggplant. Mix everything together and let it cook for 5-7 mins. I give everything a quick smash and mix it together really well!

Final Step- Top with green onion and cilantro and serve with Chapatis!! Enjoy!!!
