Vegetable Coconut Curry |
Hey everyone!! I know I had promised more posts from me, but life has been CRRRRRAAAAZY lately!! We have been so busy the past few months, hopefully once the Holiday Season is over I will get back to regularly blogging and cooking up some more deliciousness for you (fingers crossed).
I hope everyone had a Wonderful Diwali Celebration! We kept it pretty simple this year, just O, Bella and Myself (we didn't even go to the temple). We did keep up with some of the traditions (making sweets and prayers). Last year during Diwali, Bella and myself was in India enjoying Diwali (we really missed being there this year) but enjoyed the quality family time before Daddy left for India.

My In-laws were supposed to currently be here in Florida but my husbands work has sent him to India so their trip to Florida is postponed until next year. Talking about my husband, I am very jealous of him. He is currently in India (will be there for a few months) and enjoying all the wonderful food (he keeps sending me pics of the deliciousness). I told him I hope he gains 50lbs from all the good cooking he is getting. =)

Talking about good cooking, I have a really great recipe for you. It's so delicious and easy to prepare and honestly I would eat it everyday if I could. Its a Vegetable Coconut Curry, the main spice is Curry Spice (which I now know is delicious) I have never ever used Curry Powder (I told my friend this and she was like Seriously....yep) I make Curry all the time but I've never actually used the powered curry so I was interested in how it would taste! This dish is excellent for a beginner to Indian Cooking!!
So here is the ingredient list:
1 can chickpea (I buy organic)
2 small potato (diced in bite size pieces)
1 cup thawed frozen peas
1 diced onion
1 can coconut milk
2 roma tomato
1 serrano pepper (optional)
2 cloves garlic
1 inch grated ginger
4tsp curry powder
2tsp garam masala
Sautee onion, garlic, ginger, serrano (until tender and translucent) add curry powder and garam masala to mix and cook for a few minutes (you will smell the spices). Next add coconut milk, chickpeas, tomatos and potatoes and let it cook until potatoes are soft (7-10 mins), once all the other ingredients are cooked add the peas (thawed if frozen they will need to cook longer). Simmer all the ingredients on low heat for another 7-10 mins (if the curry becomes thick you can add some water to thin it out).
I served mine with Chapatis (homemade Indian bread (but you could serve with rice).
I hope everyone has a Wonderful Christmas and New Years!!! We are headed to my hometown for Christmas (I so cannot wait to be home with my family). This year has been really tough being away from everyone so I am very happy I get to go home and spend a few weeks with Family!!
