Momma and Bella

 Wow, it’s been quite a while since my last post, I have quite a few things that I want to share with my followers but first I want to say, Thank You to everyone who has reached out to our family, some of you know but to those who don't follow my personal FB page: My mom was diagnosed with cancer a few months back (Stage 4 Non-Hodgkin’s Lymphoma) so we have started Chemo treatments and for now she is doing pretty good (she has her good days and bad). This was quite a shock to our family, Our Mother is the clay that holds our family together and has 100% spent her life caring and making sacrifices for our family. Now it’s our time to take care of her and help her get through this. Our Family has seen an outpouring of Prayers and Love since she was diagnosed and we honestly appreciate each and every one of you!! Please continue to pray for healing and strength for her she is going to need it!!



Also while on my hiatus, my little one has started VPK!!! It so crazy to even say I have a school age child! Bella absolutely loves school and has told me she cannot wait to go to the "Big School" and be just like Alexis (our neighbor girl that watches Bella periodically). Bella did not even blink an eye on the first day of school; momma on the other hand, had to hold back those tears as I watched her walk into class!!

Now on to the recipe at hand! So, lately I have been on this brown rice kick, I cannot get enough of it!!! I’m a bit obsessed with it!! I threw this recipe together one night on a whim  (I tend to do that a lot lately) and man must I tell you it was so delicious!! Another bonus point is how  easy it is to put together and it’s very versatile (you can change up the veggies and maybe add some protein). This has become one of my go to recipes for when I am short on time and don’t really want to deal with cooking.
 Here is what you will need:
Cooked Brown Rice 1 cup
Bell pepper (I use 2-3 different colors)
1 Onion
3 cloves garlic
Sriracha (couple tbsp.)
Braggs Liquid Amino (couple squirts)
1 Can Black beans (I cook mine with cumin)
Cashews (optional)
Make sure you give your rice plenty of time to cook (it takes quite a bit longer than regular rice) next step cut up your bell peppers and onion, add a bit of coconut oil to a large pan, Sautee your peppers and onions and garlic (until they get a bit of color on them) throw in your cashews and cook for a few minutes, next spray the peppers and onions with a few squirts of the Braggs Amino (its similar to a soy sauce, just much healthier) add in your cooked brown rice and a few squirts of sriracha (use as much you like, we love spicy food so we use quite a bit). Top with black beans or protein of your choice and enjoy. Quick easy and delicious!!
