Cauliflower Pizza
Happy 4th of July to everyone, I hope you had a wonderful weekend with family and friends. We didn't have plans for the 4th, so we decided to hit up the pool and have a nice, quiet evening at home. Bella dislikes Fireworks (she loves to see them on TV, not in person) so we sat on the couch and watched Fireworks via the TV!! BTW, NYC had some awesome fireworks, one of these days I will visit during the 4th!!

A lot has happened since my last post, my daughter turned 4 (I can’t believe she is 4) we had a huge party with all her friends (Frozen themed. of course). I went home and visited my family for a few weeks and got to see my newest nephew, Frankie. We also celebrated my parents 25th Wedding Anniversary. My sisters and I planned a vow renewal ceremony with some of their closest family/ friends, it was truly a lovely ceremony. You can look at my parents and tell how much they love one another. They are truly an inspiration to me in my own marriage and I can't wait to celebrate 25 years with O (we just celebrated our 5th Anniversary).

So anyways now on to the Crazy Good and Amazing recipe that everyone should try! A while back I noticed a lot of people hoping on the "Cauliflower train", to be quite honest I thought people was crazy!! How can you take plain ole rice and turn it into something Amazing?!?!?!? Well, I was totally wrong!!! I have fallen in love with Cauliflower! I like it pretty much anyway you can imagine (baked, raw, fried and in the form of pizza!!!!!)

Yep, that's right I tried the cauliflower pizza and it is AMAZING!!! I honestly will never use store bought dough ever again!! This recipe is so easy to make, you must make it!!!

Here is what you will need to make the cauliflower pizza crust:

1 Head of Cauliflower
1 whole egg
1/2 cup mozzarella cheese
1/2 cup Parmesan cheese
1 tbsp of Italian seasoning
1 tbsp. of red pepper flakes


First you need to chop the cauliflower into small pieces (I put mine in the food processor and pulse for a few minutes) next cook the cauliflower in the microwave for 7 minutes. Once the cauliflower is cooled you need to squeeze as much liquid as possible out (put it in a cheesecloth or a towel and squeeze) you will be surprised how much water will come out! Next add the cheese, egg and spices to the cauliflower and mix together. Put parchment paper onto your pizza board (I usually spray the paper just in case) next press the dough onto the paper into a pizza form. Place the dough without toppings into a 450 degree oven for 15 minutes, then add the sauce and toppings of your choice and put back in the oven for roughly 8-10 mins (just to melt the cheese). The end result is a healthier version of pizza!
