Spiced Chickpea

 Happy Easter to all my Family, Friends and Followers!! I hope you all had a fantastic day celebrating with your loved ones. We started our day with an Easter Egg Hunt and a Brunch with all the fixings (pancakes, eggs, potatoes and fruit) of course, all of it was cooked by me, and might I say, pretty tasty too! I was very excited for this Easter, Bella is now almost 4, so she really gets into celebrating holidays (especially if she is receiving gifts...lol). We had a wonderful time just hanging around the house and relaxing, besides Om being sick, we had a fantastic holiday weekend.

 So, a few months back Om and I completed a Whole 30 Vegetarian Style, what is a Whole 30?? Well here is a quick overview, basically you only eat Vegetables, Fruit and in our case, eggs/beans (vegetarian) if you are not a vegetarian you can have Grass Fed Meat. We totally eliminated all processed food, dairy, sugar and wheat from our diets for 30 Days!!!

 Let me tell you it was honestly the hardest thing I have ever done, but the benefits we received are life changing!! I have never in my life felt so great about the food choices I am making. It really is an eye opening experience that I highly recommend to anyone who is looking to overhaul your diet. I highly recommend researching Whole 30 (whole30.com).

So on to what you all need  to see and make yourselves!!! My new Recipe!!! I absolutely love, love, love garbanzo beans/chickpeas with every fiber of my being (joking, well not really) so I came up with this really quick and easy chickpea recipe (seriously, its super simple). These chickpeas have just the right spice and kick, to make any salad worth eating. You can also just eat them as a snack, but be careful you can eat them all in one seating! You better have some self- control when snacking on these things.


What you will need:
1 cup of garbanzo beans (I use dried and pressure cook 3 whistles or until soft)
1 red onion diced
Handful of chopped cilantro
Garlic grated
Half Lemon
Cumin 1 spoon
Olive oil

Instructions:
Pressure cook beans until soft (3 whistle) add olive oil to a pan, add cumin, red onion and garlic Sautee for a few seconds. Next add beans, cilantro and lemon juice, and stir to combine and there you have it!!


Added to my salad!!! Delicious
