Cauliflower Rice


 Can you believe that January is almost over?!?!?!? Holy crap, it seems like yesterday we were celebrating Christmas and New Years! Wow, time sure does fly when you are enjoying life! So many exciting things are going to happen to Our Family in 2015 (stay tuned, lol)!

 Well talking about New Years, did you make a New Years Resolution?!?!? Are you sticking to it or have you like most Americans given up on it? This year I actually did not make a resolution....=) I usually do make them, but like most people give up pretty quickly, so I decided to make Monthly Goals, figured I would actually be able to keep it up if I only had to do it for a short time.

 To keep me honest and accountable I will post every month what my Goal is and I will let you know if I stuck to it. The Goal for the month of January (which is almost over) is to workout (focus on cardio) 5-6 times per week!! So far I have done pretty good (maybe missed a day or two) and I have lost a few pounds in the process, so its a victory for me.

 I have also started a Whole 30 (I will write a more informative post about Whole 30, soon)  I am trying out new recipes and of course tweaking and adding my spices to them. Which means, I will have some new recipes to share with you soon!

 On to the recipe at hand! I absolutely love Pinterest, yes, I spend way too much of my time browsing and "pinning"! While searching recipes for my Whole 30, I kept seeing this cauliflower rice (and well, you know we like our rice, its a staple in our pantry) and honestly I thought to myself while reading the recipe, rice is not something you can replace or imitate, but little did I know I was so wrong!!!


 I made this recipe and was astonished and quite speechless at the resemblance to rice. The consistency and flavor of the cauliflower was delicious! This recipe is now one of my favorites and one of my go to quick and easy meals.

I topped my "rice" with my pinto beans recipe (previously blogged). I hope you try this recipe and enjoy it as much as we did!!



Recipe is pretty simple:
Cauliflower (1 head)
Olive oil
Salt
Pepper

Cut your cauliflower into small pieces and put in food processor, blend until the cauliflower is small like rice. Place on a baking sheet and drizzle olive oil (enough to coat) and salt/pepper. Bake at 450 for 12-15 mins or until your desired crispiness (crispy is good). I added the juice of a lime and cilantro while it was hot (yum). Serve immediately!
