Summertime = Grilled/Roasted Eggplant
Hello Everyone!!!! Wow what a busy few weeks I've had!! First of all my baby girl turned 2!!!! Yes, that's right she is now a Big Girl....sad face! We had a huge party for her with all of her little friends and she loved every single minute of it!
Today the hubs and I decided we were going to get the ole grill out and do a bit of grilling!!! Man am I glad we did or should I say my taste buds are happy campers right now!
Now, I am no expert with the grill, but this dish is a must for the grill!! The dish is so simple and easy to make (anybody can make it) and honestly I am not a huge Eggplant lover but I really enjoy this version of Eggplant! Also this is vegetarian and so healthy....so you cant go too wrong...wink, wink!!!
Ingredients Needed:
Eggplant
1/4 small red onion
1 green onion
Peanuts (chopped or crushed) (optional)
Serrano pepper (optional)
1 clove of garlic
Spices:
1/2 spoon of turmeric
Salt to taste
Slash eggplant and place on grill! |
Step 1: Slash the Eggplant (lengthwise) long slashes on all sides (take out all your anger on the Eggplant...lol) Put the Eggplant on a hot grill (I usually lay foil under mine to keep all the juices)...let it cook on the grill and rotate it every few minutes (when it is done it will be limp and almost falling apart).
Step 2: Take it off the grill and let it cool...once cooled peel the skin off the Eggplant (it will pretty much slide off into your hands).

Step 3: Chop onions, pepper (optional) and peanuts (grate garlic)...add oil to pan and fry until tender (just a few minutes) add turmeric and Eggplant cook for a few more minutes (with lid) and you are done...add salt to taste!!!
