Crockpot Coconut Chicken |
I am always looking for Good Chicken Recipes (I personally do not know much about chicken cooking) We eat a mostly vegetarian diet so I don't have a lot of experience cooking with meat. But of late we have started trying to incorporate more meat into our diets.
I came across this recipe a while back and decided I would take the risk and cook it (with my own twist) and I must say I am totally pleased with the outcome. It was so good and super duper easy to throw together!!! This chicken recipe is a must-try!!
Here are the ingredients:
1 pack of chicken (boneless, skinless) (bite-size pieces)
2 cans of coconut milk (I used lite)

4 cloves of garlic
2 inches of ginger
1 small onion (sweet)
butter (2 tablespoons)
olive oil (just enough for the bottom of the pan)
2 spoons of cornstarch (this helps thicken the soup)
2 cups of Vegetables (I used frozen peas and corn)
Bamboo Shoots (optional)
Spices:
1/2 spoon of pepper
1 spoon of cumin
1 spoon of coriander
2 spoons of turmeric
1/2 spoon of chili powder or flakes (if you want some heat)
Step 1: Combine onion, garlic and ginger in a blender and make a paste. Add oil to a skillet and butter (once melted) add onion mix and cook for a few minutes, then add the spices and let cook for a few more minutes.

Step 2: Once the onion/spice mix is combined, add the chicken pieces (bite size pieces) move the spices to one side of the skillet and brown the chicken on all sides! Once it is browned mix with the spice/onion (chicken should be completely coated).

Step 3: Put the chicken into the crockpot and add the coconut milk...I like to use bamboo shoots in mine so at this point you can add them (this is totally optional). Put a lid on the pot and cook on low for 4 hours.
Step 4: After 4 hours of cooking whisk the cornstarch with a bit of water to make it smooth and add it to the crockpot. You can also add your Vegetables at this point. Cook for about another 1/2 hour until your vegetables are cooked!

We served ours upon a bed of Jasmine Rice (yum)!!! You can add any vegetable of your choosing!!! If you want it more spicy add chili flakes. This dish is not really spicy so your kids will love it...(mine does)!!! Hope you enjoy =)
