Maharashtra Curry Chicken
 
 
 
A few of you guys have been asking me for a Chicken dish so here is a delicious and easy chicken dish that My husband makes and even my picky little daughter will eat it too!
 
 
Ingredients:
 
1 Pack of Boneless/Skinless Chicken (I use Chicken Tenderloins)
3/4 red onion
4 cloves of garlic (2 for marinating & 2 for cooking)
2 inches of ginger (1 inch for marinating and 1 for cooking)
1/2 lemon
1 Serrano pepper
handful of cilantro
tomato puree
3/4 cup of water
Spices: turmeric, tandoori masala, garam masala & salt
 
 
Step 1: You want to marinate the Chicken (at least 2 hours in advance). For Marinating grate 2 cloves of garlic and 1 inch of ginger, cut chicken into bite-size cubes, add 1 spoon of turmeric, tandoori masala and salt (combine all ingredients with hands) put back in refrigerator for a few hours (the longer it marinates the better).

Step 2: Blend onion, garlic, ginger, cilantro & Serrano pepper finely...add oil to pan and let the oil get hot...add onion mixture and cook for 5-7 minutes (roughly).

Step 3: Add chicken, pinch of turmeric, 2 spoons of tomato puree and 3/4 cup of water (you could also use broth) Put on Medium heat and put a lid on the pan and cook for 10 minutes.

After 10 minutes of cooking it will look like this!

Step 4: Once the chicken is cooked add a pinch of garam masala and let it cook for another 5 minutes and add salt to taste!

 Tips: If the chicken is looking dry you can always add more water (during the cooking process the water mostly gets cooked out)....If you want this more spicy add chili powder!
