Crockpot Chipotle Black Beans & Rice
So, we all have those days where we are Crazy Busy and don't really have time to make a Good and Healthy dinner and we don't really know what to make. So instead of turning to takeout or drive-thru food get out that dusty ole crockpot and throw these ingredients together and have a Fabulous and Easy Crockpot Dinner!
Here are the ingredients you will need:
2 Cans of Black Beans (any type)
1 can of Fire Roasted Tomato (you can use fresh tomato too, but I prefer the Fire Roasted)
1/2 Onion (I use red but any is good)
3 Cloves of Garlic
1 Serrano Pepper
2 Chipotle Peppers (and their juice)
1 32oz Chicken Broth (Vegetable Broth works well too)
1 cup of White Rice
2 spoons of cumin & Salt to taste

Step 1: Chop the onion, garlic, Serrano pepper & Chipotle Peppers (finely).
Step 2: Add the Onion Mix, Beans, Tomato, Broth, Cumin & Salt (to taste) to the Crockpot put the lid on it and let it be! (I cooked mine on high for 5 hours and 1 hour on medium).

Step 3: 1 Hour before serving add the Cup of Rice (this is when I put it on Medium). Right before serving add a handful of cilantro (roughly chopped) and 1 whole lime.

Tips: We serve it with Cheese, Sour Cream, Diced Onion (green onion) and Tortilla Chips!
