Vegetarian Black Bean Taco Salad
So we all have those meals that reminds us of our Childhood and Taco Salad is one of mine! Growing up Taco Salad was one of those meals that would feed an army for very little money, so every time I eat Taco Salad it reminds me of my childhood. Here is my vegetarian version of Taco Salad! Hope you enjoy!
Ingredient List:
I cup of dried black beans
Here is what a pressure cooker looks like! |
1/2 red onion
1 Serrano pepper (with seeds for heat)
Cumin, Salt, Taco Seasoning & Chili Powder
Step 1: Pressure Cook your black beans with 2 cups of water (or use canned beans). I always use my pressure cooker and it literally takes minutes!
Step 2: Chop onion & pepper (as small as possible). Saute them together and then add the spices: 1 spoon of cumin and 1/2 spoon of chili powder and salt to taste. Cook them with the spices for a few minutes and let them come together.
Step 3: Add the cooked black beans and the water you cooked them in! Stir and combine all the ingredients and add half a pack of taco seasoning. Cook for about 5 minutes!
Top with all your favorite toppings. I usually serve mine with lettuce, tomato, onion, salsa, sour cream, cheese and Crushed Doritos (a must)!
