Mexican Gumbo
Hello Everyone! So, tonight for dinner I made Mexican Gumbo and I must tell you it was really good! The very first time I had Gumbo was when O and I were dating we went to Qdobas for lunch every Sunday (we were regulars) and O told me to try the Gumbo and every since I have been hooked on it. I can remember many times while eating this dish not saying a single word to one another because we were so busy eating!
When we moved to Oregon we were shocked to find out that there were no Qdobas there, so we gave it our best shot on recreating the recipe. So for the past few years (yes, years....lol) I have been perfecting this recipe and I thought I would share it with you. P.S....now we have Qdobas in Florida....YAY!!!
This recipe is really easy and can be a vegetarian/vegan dish. Warning once you make this dish you will be addicted!!! I hope you Enjoy!
Here is what you will need:
1 cup of black beans (I use dry beans and pressure cook them) but you could also use can beans
1 white onion....1/2 for the beans and 1/2 for the soup mixture
5 cloves of garlic....2 for beans and 3 for soup
1 inch of ginger
2 Serrano pepper (optional)
1 bunch of cilantro
32oz of Chicken or Vegetable broth ( I have also used just plain water but broth is better)
2 large tomato
Spices: Cumin, Chili Powder (optional) and Salt to taste
Step 1: Blend the tomato, cilantro, 1/2 white onion, 3 cloves of garlic, ginger and Serrano pepper until they are really fine. Put all the ingredients in a pot and add the broth (I use the whole 32oz) add 3 spoons of cumin and salt, bring to a boil and once it is boiling put on low and let it simmer for about 30 minutes (roughly).

Step 2: Sauttee 1/2 onion (finely diced) 2 cloves of garlic and Serrano pepper and cook until soft. Add the black beans and cook for a few minutes (3 or 4).

Step 3: Cook white rice ( I use a rice cooker) you could probably use brown rice but it might change the flavor a bit.
Garnish with cheese, sour cream, onion, tortilla chips and guacamole.
