Pav Bhaji
Hey guys so I am finally getting around to getting some time to post again. I have been a very busy woman lately and I just cant get caught up, but here I am!

So this dish is a Very Popular dish in India.....it is called Pav Bhaji!! In India you will find this dish served in carts roadside as a snack. What I really love about this dish is the versatility, you can pretty much use any type of vegetables (frozen or fresh) and it is so easy and Healthy for you!
When I eat this meal it always reminds of India and of my very first visit there. We had been travelling all day from Gujarat to Pune and we were trying to decide on what to do for dinner because we were exhausted from travel (those who have traveled in India know what I mean when I say exhausted) and the neighbors whom I had just met seconds before came over to our house and brought Pav Bhaji for us. So every time I eat Pav Bhaji it reminds me of the Wonderful people in India.
Here is Line-up of Ingredients:
1 cup of Cauliflower
1Green Bell pepper
1 small/medium potato
1/2 cup of corn
2 large tomato
1/2 red onion
3 cloves of garlic
1 inch of ginger
1 Serrano pepper
Pav Bhaji Masala (can be found in any India grocery)
Cumin & Chili Powder 1/2 spoon of each

Step 1: Bring all the veggies (minus tomato) to a boil to get them soft and easy to mash (I usually pressure cook mine).
Step 2: Blend tomato in the blender (pretty much puree them)
Step 3: Chop onion, garlic, ginger & Serrano pepper (as small as possible, or blend them)
Step 4: Sautee the onion mix, until soft and tender, then add the tomato puree. You will want to cook this together for about 5ish minutes. At this point I usually add cumin, salt, chili powder and my Pav Bhaji Masla and let it cook for about 5 minutes.

Step 4: Smash all the vegetables (be sure to empty out the water from the pot first) if you want to make it easier you can put the vegetables in a blender and pulse them for a few seconds.
Step 5: Add the vegetables to the onion/tomato mix and stir together ( I usually taste once I have added vegetables to be sure my spices are on point) add more Masala if needed. Let cook for about 5-10 minutes and enjoy~

Tips: Right before serving add a few tabs of butter and serve with diced onions and chapatti or bread (Hawaiian Bread is really good with this recipe). I also like to top with cheese and sour cream!!!
