Chicken Biryani

 Hi, All, hope everyone had a Wonderful Weekend!! Just as I promised I'm going to give out My (well, not really mine, but my mother-in-laws) Chicken Biryani dish. This dish is absolutely one of my most favorite dishes that my MIL makes when she comes to visit!!

The visit before last I sat with her while she made it and wrote down EVERY Single step (literally EVERYTHING) after she left I followed the recipe to a tee, but it wasn't quite as good as hers, so I kept testing and adjusting and I finally feel like its ready for its Debut (so to speak).

This dish does have quite a few spices, but I promise you its well worth the money to purchase them. Once you have this dish, it will quickly become a favorite!! I have made this dish quite a few times when we have company over for dinner and everyone loves it!!

Ingredient List:
1lb boneless chicken
Yogurt (4 spoons
Rice 2 cups
onion (1 big)
ginger (2 inches)
garlic (2-3 cloves)
Roma tomato (2)
butter
Cilantro & Mint (handful of each)

Spices:
turmeric (1 tsp
garam Masala (1 tsp for marination, 1 tsp for cooking
cumin (1 tsp
cloves (3 cloves
cardamom (3 pods
cinnamon (half stick or 1 tsp
bay leave (1
chili powder (half spoon
Biryani Masala (2 spoons

First step is to marinate the chicken (I usually do morning of cooking)
cut chicken to bite size, add 4 spoons of yogurt, 1 clove garlic, 1 inch of grated ginger, 1 spoon each of turmeric & garam masla. Mix everything together and let it marinate. Be sure to give your chicken plenty of time to marinate!!!



Next step is to cook your rice (I use my handy dandy rice cooker, super simple and delicious rice is always the end result. (Both of these steps can be done the morning of and kept for later)

Cut your onion, ginger & garlic (1 clove/1 inch)  or you can throw it in the blender less work for you, keep to the side.

Next add oil to a big pot (cover the bottom of your pan) add cumin (1sp), cloves, cardamom, cinnamon & bay leave (stir together for few minutes) add the onion mix, tomato cook for 2-3 minutes, next add your marinated Chicken (high heat) get a nice sear on the chicken (few minutes on each side) turn heat to med/low with lid and cook for 5 minutes.

After 5 minutes add chili powder, garam masala and salt, cook for another 5 minutes with lid.

Next add Biryani masla, 1/2 cup water, handful of cilantro and mint cover with lid and cook 3-5 minutes.

Once your chicken is finished cooking remove half the chicken and its gravy and set aside, add a layer of rice (just a thin layer) over the chicken left in the pot, add small cubes of butter on top of rice and sprinkle with water. Next add the rest of the chicken, the other half of the rice, add the butter and sprinkle with water again. Put on LOW fire for 10 mins (with lid). Serve immediately!

I usually have this dish with Raita (literally yogurt with onion and cilantro).




Spices/onion/tomato 
After 5 mins



Remove half for layers
Leave half in pan

Add layer of rice

Now add some butter

Repeat 

End Result!!!
