The Best Vegetable Soup Ever!!

 One of my favorite times of the year is Fall!! Some of my favorite things (food), to be more accurate are in Season....Pumpkin, caramel apples, apples, cider and did I say PUMPKIN.....lol!! I also, love fall because leaves start falling and the temps start to drop, which means Hoodies/Sweaters and bonfires. Some of my Favorite Childhood Memories are during the Fall time.


 When I think of food that fits in with Fall (besides pumpkin...lol)  I  look for some Comfort Heart-Warming Food, So the first thing that comes to my mind is soup! First of all soup is usually so simple but yet delicious, secondly soup is so comforting and warms your soul and thirdly who doesn't like soup!?!? OK, okay you got the picture right......I Love Me Some Soup....lol


 So anyways, I have been mastering The Perfect Vegetable Soup.....This girl is soooooo Happy!!! Seriously when I say perfect I really mean it! O and I seriously love this Soup, when we eat it we honestly don't say a Single Word, until after, we are finished. You know its perfect when you cant stop eating!!!


 The Recipe for this soup is pretty simple and easy to make and the ingredients can be changed to fit your taste. For example, you could add cabbage, spinach, kale, peas or corn (the list goes on and on).


Ingredients:
3 med potatoes
3-4 whole carrots
3-4 celery stalks
1 onion
3 cloves garlic
1 can tomato (fire roasted)
1 spoon dried basil
1 spoon dried Italian seasoning
1/2 spoon rosemary
1 bay leaf
Salt & Pepper to taste
4 cups of Vegetable Broth & 3-4 cups of water (add throughout the cooking process)
4 handfuls of dry beans (I have used Lima, butter & kidney)


Chop all your veggies (bite size pieces) add some olive oil to a big pot and throw your veggies and spices and cool for 5ish minutes. Add your vegetable broth, tomato and beans to the pot, stir and bring to a boil.
 

 
 
 
 
 
 
 
 
 
 
 Turn the heat to medium and stir every 20-30 minutes and check the water level. After about an hour on medium the veggies/beans should be pretty much done. I then turn the heat to low and let cook for another hour or even longer (the longer you cook the soup, the better it turns out). I keep this soup on hand for easy lunches/dinners, it keeps for about a week.
