Indian Cabbage Potato Stir Fry

Hey everyone, how are you all doing?? We are doing great here in the "American Curry Household". Life seems to never slow down these days! We have so much going on right now but I wouldn't trade it for anything in the world!!

Talking about keeping me busy, here is a recent photo of My Little Baby Girl, "helping" Momma cook! She is definitely my Little Helper these days. Its Amazing how fast she is growing up and much she picks up on stuff. This picture is of her making Chapati (Indian Flatbread), (with a bit of help from Momma). She absolutely loves to roll out the dough and she does a pretty good job for being 3....

This dish I absolutely looooooveeeee!! My mother-in-law makes this dish specially for me (my husband doesn't really care for cabbage) so I relish the days I get to have this dish. Just looking at the pictures from the dish makes my mouth water....hehehe!!! OK, ok, ok, I am done....lol. No, but really make this dish its amazing!!

Here is what you will need to make this mouth watering Vegetarian Dish:

2 Red Potato (med size)
1/2 head of Cabbage
1/2 Onion (optional)
1 spoon turmeric
1/2 spoon chili powder (optional)
1 spoon mustard seeds
1/2 spoon asafoetida

Chop potato, cabbage and onion (bite size pieces), heat some oil in a pan, add mustard seeds (let them start popping) add cabbage/potato mix, put lid on pan and allow to steam and soften (roughly 5-8 min). Once mix has cooked for a bit add the turmeric, chili powder, asafoetida, salt/pepper and let it continue to cook until potato is done!!

Serve with Chapati!! This dish is super easy to cook and really tasty and very healthy!! Enjoy

Till Next Time,
XOXO DeAnna
