Spinach, Tomato & Garlic Soup
 
 
 
 
 
Hey Everyone!!! I hope everyone is having a Wonderful Start to 2014 (I know, I am a bit late, but here's to '14'). This year I have made some Promises to myself, and one of those promises is to, Eat HEALTHIER! So I came up with this Delicious & Healthy, Soup Dish, and thought I would finally share it with y'all!!
 
 
 
 
Ingredients Needed:
 
2 Large Tomato
8oz Spinach (Fresh)
3 Garlic Cloves
Butter
1/4 Cup Half/Half
 
Spices:
2 Tsp Cumin
Chili Powder or Red Flakes (optional, to taste)
Salt/Pepper to taste
 
Step 1: Seed your tomato and cut in half. Put your tomato, spinach and garlic cloves in your Pressure Cooker (1 whistle is plenty). If you don't have a pressure cooker cover with water and bring to a boil. This step helps to soften and cooks it faster!
 
Step 2: Drain the water (SAVE this water, it is very nutritious and you will use some of it to thin out the soup). Put the Spinach mix into a blender with some of the water (about a cup, this will help blend the soup) blend until the soup is really smooth (just a few seconds).
 
Step 3: In a big pot add butter and Cumin, toast the Cumin in the butter (you will start smelling the spice) add the Spinach Mix (be careful, it gets a bit poppy...lol). Add the Reserved Water (I add about 2 cups, just to thin the soup out a bit). Add Salt/Pepper and Chili Powder/Red Pepper Flakes to taste (I like it hot, so I add quite a bit). Bring this to a boil and let it reduce down a bit.
 
Step 4: Add the Half/Half and let it cook for a few minutes! Then pour and Enjoy! I usually serve this along biscuits/crescent rolls (delicious!!!!).
