Black Bean Casserole
 



 
 
Hello Everyone!!! Hope you guys are enjoying your summer!! I definitely am enjoying every single minute of mine with my little Princess. I am very lucky to get to spend every waking minute of my day with her and honestly, I wouldn't trade it for anything in the World!!!
 
 
 Now to my YUMMY Casserole Recipe!!! This recipe is my Go-To Casserole Recipe.....because it is so freaking easy and delicious!!!! My Indian In-Laws always request me to cook this meal for them when they come to visit....so if they like it...pretty sure you Will too!!
 
 
 
Here are the ingredients:
 
1 Cup of Cooked White Rice (could use brown too)
1 Cup of Cooked Black Beans (could use canned beans)
1/2 Red Onion
3 Cloves of Garlic
1 inch of ginger
Black olives
8oz Cheese (I use Colby/Monterey)
Jalapenos (garnish)
 
Spices:
 
2 Spoons of Cumin
1/2 Spoon of Chili Powder
Salt to taste
 
 
Step 1: Chop your onion, garlic & ginger (or blend together)....place in pan with a bit of oil and butter and sautee until tender. Once tender, add Cumin & Chili Powder (optional) and cook for a few more minutes....then add your black beans with the juice (not too much, just enough to keep everything moist) and cook for a couple more minutes.
 
Step 2: Once the beans are cooked..... add the Cooked Rice (make sure it cooked).
 
Step 3: Once the beans/rice are combined put them in a baking pan (I use glass)....top with cheese, black olives & jalapenos (optional).
 
Step 4: Pre-heat oven to 350 degrees and cook the casserole for roughly 15 minutes....everything is already cooked so you really just need to melt the cheese and heat everything back up!
 
 
Some Extra Tips: This is a Great Make-Ahead Dish!!! Also I love to eat this on a tortilla with a bit of salsa....yummo!!! Hope you Enjoy (because I do)!!!!
