 South Indian Chicken (My Version)
 
 
 
 
 
 Hey Everyone so finally I am posting a New Recipe!! I apologize for not being on here lately, I have been crazy busy lately but I have a Really Good Recipe for you!!!
 
 
 Have you ever made a dish by accident???? I admit it, I have way too many times to count....lol, and honestly sometimes it turns out pretty bad, but this Chicken Dish turned out pretty good!! My husband gave it Rave Reviews and if he puts his stamp of approval on it, then we are all good!!
 
 
Here is what you will need:
 
1lb Boneless Skinless Chicken
1 Cup Greek Yogurt
1/2 Red Onion
1/2 Cup of Cashews
1 Roasted Bell Pepper
1/2 Cup of Cream
3 Squirts Ketchup
Butter
Cilantro (Garnish)
 
Spices:
2 Spoons of Cumin
2 Spoons of Coriander
Chili Powder (to taste)
1/2 Spoon of Cinnamon
Cardamom (2 pods ground)
2 Spoons of Turmeric
Curry Leaves (handful ground)
3 Cloves Garlic (paste)
1 inch of ginger (paste)
 
 
Step 1: Marinate the Chicken (minimum 2 hours) Chicken cubed into bite size pieces marinate with yogurt, 1 spoon of cumin, 1 spoon of coriander, 1 spoon of turmeric, garlic, ginger, chili powder & salt. Once, marination process is done....Cook chicken all the way through and set aside.
 
Step 2: Roast Red Bell Pepper and cut into pieces, dice onion into small pieces....put onion, bell pepper and cashew in pan and cook until brown. Take off heat and put in blender and make a fine puree (add water if needed). This step is very important puree as fine as possible!
 
Step 3: Using the same pan add a bit of oil and tablespoon of butter with: 1 spoon of Cumin, Coriander & Turmeric, Cinnamon, Cardamom, Curry leaves....saute, this together for a few minutes (you will start smelling the aroma....yummy!!!).
 
Step 4: Add the bell pepper, onion & cashew puree to the spice mix.....cook for about 4-5 minutes. Add the ketchup and cream and keep cooking (low heat). Then add the Cooked Chicken Cubes and toss to make sure everything is coated evenly. If you want it to have more liquid add a bit of water or more cream.
 
Step 5: Taste and adjust spices & salt if needed.....chop some cilantro for Garnish!!! Serve with Chapati, Naan or Rice.....(or all 3)!!!
